How do I figure out how many processors and the speeds, etc. are in my Linux box?

Try this:
cat /proc/cpuinfo 

Note - there are some other useful files in /proc:
/proc/devices - lists devices such as harddrives, CD roms, etc. 
/proc/meminfo - lists the amount of memory on the machine
